A restaurant outside the choir: the value of diversity
In the small restaurant of the farmhouse La Casa di Campagna we want to pay attention to those who want to enjoy a traditional cuisine that does not claim superiority but which is a guarantee of authenticity and love for the good things of the past, spending time in a pleasant country surrounded by a quiet atmosphere, intimate and not crowded.
Following the passion for taste that evokes memories and forgotten places we have chosen not to carry out a kitchen in quantity but quality. We dedicate it to those who really want to taste the simple and sincere taste of tradition, in which the herbs grown in the garden and the extra virgin olive oil of local or own production are the best condiment.
Mara, owner of the farm and cook, offers her guests with simplicity and passion family recipes, those that evoke lunch on Sunday at the home of grandparents, the classics of the peasant tradition, in the framework of a truly farm-to-table cuisine. Homemade pasta, handmade according to family tradition, all the desserts and very often bread are been made by her.
Our desire is to give you back your time, there is no hurry to get up, there are no people waiting… we like to be outside the choir.
Tradition and territoriality: some of the dishes offered
Tradition and territoriality are the ingredients of Mara’s cuisine. In this way, you can taste cold cuts and cheeses accompanied by jams and preserves of vegetables produced by yourself. Then there are the typical dishes of Trasimeno, a land in the middle between Tuscany and Umbria, territories from which the dishes take equal inspiration and form: the pici all’aglione, the pappa al pomodoro, the cantucci with the vinsanto on one side, the tagliatelle with white sauce, the guinea fowl in salmì on the other.
On request Mara also prepares lake fish, typical of the Trasimeno area: smoked tench, freshwater prawns, taglierini with perch and regina in porchetta will make you discover the culinary tradition of this small area of Umbria, which still boasts the presence of a Slow food presidium, the Trasimeno bean, particularly suitable to accompany the typical catch of the area. The whole creates a harmonious whole, which goes beyond territorial boundaries and makes this cuisine a true crossroads of traditions and flavours.
A kitchen of raw materials: the philosophy of zero km
The ingredients are from the same farm La casa di campagna or local producers. The menus are constantly changing, following the seasonality of the products and the inspiration of the cook. The cuisine of Mara is thus able to follow the philosophy of farm-to-table in a natural way, both as regards the origin of raw materials and the origin of the dishes, strictly following the territoriality.
The holidays are the moments in which the adherence to tradition is expressed most: Easter breakfast with the cake of Umbrian Easter accompanied by local cold cuts and cheeses, the ciaramicola, a typical Easter cake, the roast goose of August, the broad beans with pecorino in spring will make you feel as if you had lived in Umbria for a lifetime.
As a farm La Casa di campagna has a large vegetable garden in the summer, which allows you to enjoy the taste of the sincere products of the land.
A small farm is a great attraction, especially for children. The production of preserved vegetables, extra virgin olive oil, tomato sauce from the garden, jams, suitable to accompany special starters and cheeses, will make you touch with your own hands the sense of territoriality that the place expresses, allowing you to bring with you the flavors of your stay in this corner of Umbria.
